How to create a festive eco swag
Why not try getting crafty and creating your own decorative centrepiece? A modern take on a traditional Christmas wreath, a beautiful eco swag can be made using foraged greenery or collected stems from your garden. Best of all, it looks stunning but is easy to make.
You can get the whole family involved in the foraging, and even add new dried elements to it every year. Look for ivy, eucalyptus and a mix of evergreens – eucalyptus sprigs particularly lend themselves to being sprayed a different colour, so they could match whichever festive scheme you’ve chosen for your home.
1. First, form the back using the ivy and evergreens as the base. Decide on the length of the swag, then trim your stems accordingly. Wrap twine around the ends to hold them firmly in place.
2. As you would with a bouquet of flowers, evenly place more delicate foliage throughout your display and secure with twine.
3. Finish off by wrapping some pretty ribbon around the ends, making sure to cover all the twine. Then, hang it wherever you like – on your door, over a doorway, off a mantelpiece – to enjoy throughout the festive period.

Tomato, onion & feta couscous salad
Ingredients
110g pack Waitrose tomato & onion couscous
200g Greek feta cubed
1 red onion, thinly sliced
½ cucumber, thinly sliced
270g cherry vine tomatoes, halved
30g Greek Kalamata olives
1 tbsp red wine vinegar
1 tbsp extra virgin olive oil
Fresh mint, chopped, to serve
Method
1. Prepare the couscous according to pack directions, then mix through the feta, red onion, cucumber, tomatoes and olives.
2. Whip up a simple dressing with the vinegar and oil, then stir through. Garnish with the mint before serving.
