1. Pour the rum and ginger beer into an old-fashioned glass filled with ice.
2. Squeeze over the lime wedge and add the bitters. Stir gently and finish with the lime wheel and/or candied ginger.

1. Add the sugar, cinnamon, nutmeg, cloves, vanilla and salt to the soft butter and mix well to combine.
2. Pour or spoon the butter mixture into a container. Store in the fridge until needed.
3. Heat 60-120ml of water over a hot hob or in the microwave. Place 1 tbsp of the butter mixture into a mug along with the rum. When the water is very hot, pour it into the mug and stir thoroughly. Drink while warm.
