Racks of

Welsh Lamb

with rosemary, lemon & garlic

It doesn’t get much better than a juicy rack of lamb, and this one’s a real treat!

Ingredients

• 2 lean racks of PGI Welsh Lamb
• 2 large sprigs of fresh rosemary, finely chopped
• 1 lemon, rind removed and juice
• 3 garlic cloves, finely chopped
• 2 tbsp olive oil
• Black pepper
• New potatoes, to serve
• Green salad, to serve

Method

Heat the oven to 180°C/160°C fan/gas 4-5. Take the two lean racks of lamb and calculate the cooking time: medium – 25 mins per 450g/0.5kg plus 25 mins; well done – 30 mins per 450g/0.5kg plus 30 mins.

Mix the rosemary, lemon rind and juice, garlic, olive oil and black pepper together, then rub into the racks.

Cook the lamb on a preheated barbecue with a lid or place onto a rack in a roasting tray and oven roast for the calculated cooking time.

Serve the lamb with new potatoes and a green salad.
