What you'll need

125g unsalted butter, softened

175g soft light brown sugar

100g caster sugar

1 egg

1 tsp vanilla paste (optional)

300g plain flour

1 tsp ground cardamom

½ tsp baking powder

1 orange, zested

200g dark chocolate, roughly chopped

Let's make it

Step 1

Heat the oven to 190C/170C fan/gas 5, then line two baking trays with baking parchment. In a large bowl, mix the butter, both sugars and a pinch of salt using an electric whisk for 4–5 mins until pale and creamy.

Step 2

Beat in the egg and vanilla paste, if using, then add the flour, ground cardamom, baking powder, orange zest and 2 tbsp cold water. Mix until you have a thick dough, then fold in three quarters of the chocolate.

Step 3

Shape the dough into 18-20 evenly sized balls, then transfer to the prepared baking trays, leaving a few fingers of space between them. Gently press down on each one until around 1cm thick, then sprinkle with sea salt flakes and press in the remaining chocolate pieces.

Step 4

Bake for 10-12 mins until golden brown. Leave to cool slightly on the baking trays, then transfer to a wire rack to cool completely.

Tip

If you can’t find ground cardamom, you can substitute it for ½ tsp ground cinnamon.
