1. Rinse the prawns and pat dry, then run a small knife down the back of each one, so they butterfly out as they cook. Clean the head by removing the inside of it.
2. Put the garlic in a small bowl with the butter and add the lemon zest and parsley, along with a generous pinch of sea salt and pepper. Stir thoroughly to combine, then fill the head and back of the prawns with the mix, ensuring it reaches all cavities inside the head.
3. Steam the prawns on the Steam setting over the Steam Reservoir for 4-5 mins. Once cooked through, transfer to a plate and serve hot.
