Spiced sweet potato & egg

Create some midweek dinner (or lunch) magic with this delicious recipe – it gives the trusty baked potato an exotic twist!

Ingredients

  • 4 sweet potato, scrubbed
  • 2 tsp harissa or chilli paste
  • 4 spring onions, sliced
  • 4 large British Lion egg
  • 100g low fat cheddar cheese, grated
  • salad, to serve

Method

1.  Heat the oven to 200C/180C fan/gas 6. Prick the potato skins all over with a fork and rub a little salt into the skin. Bake for 40-50 mins, or until tender.

2.  Cover the base of the potatoes in foil, then cut a cross into each one. Mix together the harissa and spring onions, then make a hollow in the middle of each potato. Spoon in the harissa mixture, then crack an egg into the hollows.

3.  Scatter over the cheese and return to the oven for a further 8-10 mins, or until the egg is baked to your liking. Serve with salad.
