Easy egg, goats cheese and chilli jam tarts

MAKES 4 | PREP 25 mins | COOK 15 mins

Ingredients

1 x 320g pre-rolled puff pastry sheet

4 tbsp chilli jam, plus extra to serve

handful of rocket

4 Freshlay Farms Golden Yolker eggs, plus 1 extra, beaten, for glazing

100g goat’s cheese, sliced

handful of chives, finely chopped, to serve

Method

1. Heat the oven to 220C/200C fan/gas 7 and line a baking tray with parchment. Unroll the puff pastry sheet, then cut into 4 rectangles. Place on the tray, then top each with 1 tbsp of chilli jam and spread across the pastry. Scatter the rocket on top.

2. Fold the edges of each rectangle around ½ cm over the filling, then crack an egg into each one. Divide the goat's cheese slices between them, then brush the pastry border with the beaten egg.

3. Cook for 12-15 mins, until the egg has set and the pastry is golden. Season with salt and a good crack of black pepper, then sprinkle the chopped chives. Serve with a little extra chilli jam.

TIP: If your eggs are on the older side and the whites are runnier, crack it into a sieve before tipping onto the parcel to get rid of any slimy egg whites.
