3 delicious plant-based recipes inspired by Liz Earle Beauty

For almost 30 years, Liz Earle Beauty has harnessed the power of botanicals to create its award-winning products. And while they’re great for your skincare routine, it should go without saying they’re also delicious when used in your meals. To prove it, recipe creator Ellie Mulligan has whipped up some quick and tasty Liz Earle Beauty-inspired* treats you can easily make at home.

Kale, chickpea & cranberry winter salad

Ingredients

100g kale, stalks removed and roughly shredded

2 tbsp extra virgin olive oil

½ orange, zested and juiced

50g dried cranberries

50g walnuts, roughly chopped

540g jar of chickpeas, drained and rinsed

Method

1 Add the kale to a large mixing bowl, then massage the oil into the leaves. Mix in the orange zest and juice, then add the rest of the ingredients. Toss to combine, ensuring everything is coated with the oil and juice. Season well with salt and pepper before serving.

Berry smoothie

Ingredients

100g blueberries

100g raspberries

100g strawberries, hulled and halved

Small handful fresh mint, leaves picked

2 tbsp milled flaxseed

100g almond yogurt

2 tsp runny honey (optional)

Method

1 Add all the ingredients to a high-powered blender and blitz until smooth. Add in a little water, if you prefer a looser texture, and for a sweeter drink, drizzle in the honey.

Buckwheat, mint & pomegranate salad

Ingredients

300g buckwheat, cooked

1 pomegranate, de-seeded

½ cucumber, cut into thin half moons

small handful mint, leaves picked

50g dried cranberries

25g pumpkin seeds

small handful borage cress (optional)

½ lemon, zested and juiced

1 tbsp extra virgin olive oil

1 tsp runny honey

Method

1 In a large mixing bowl, combine the buckwheat, pomegranate seeds, cucumber, mint leaves, cranberries, pumpkin seeds and borage cress, if you’re using it. Sprinkle over the lemon zest, then mix again.

2 Whisk together the olive oil, lemon juice and honey in a separate bowl and season well with salt and pepper. Pour the dressing over the mixed salad, tossing to combine, then serve.
