Even if you’re extra careful with your portions, you’ve probably found that it’s almost impossible to host Christmas dinner without having food left over at the end. Of course, you might be like our Host with the Most Isabella, who’s always getting creative with her leftovers to make sure not a single scrap goes to waste. But if you’ve ever found yourself left with a fridgeful of festive food and no idea what to do with it, here’s a little bit of meal inspiration from Morrisons.
Whichever fresh, 100% British meat centrepiece you choose from Morrisons, you’re likely to have plenty left over after your Christmas dinner. The simplest way to use up your leftover meat is by shredding it and adding it to a range of one-pot meals, such as curries, chillies and stews. If you want to use yours in a pie, turkey works well with a creamy leek or mushroom filling, while red meat pairs beautifully with a rich steak and ale sauce. But both would also make a tasty topping for nachos, pizza or a hot bowl of ramen.
Don’t worry if you don’t get through all your fresh British vegetables from Morrisons on Christmas day, as you can use them up in all manner of delicious dishes afterwards. If you want to go down the traditional route, you could fry them all off to create a crispy plateful of bubble and squeak for breakfast. Or you could add them to your favourite soup for lunch, followed by a hearty veggie pasta bake topped with all your leftover cheese for dinner. And if all else fails, you can just roast them together in an easy traybake, with dollops of melty brie and cranberry sauce.
A leftovers grazing platter is a great option for Boxing Day, especially if you’re feeding a crowd. Simply arrange a selection of cold meats, leftover cheese and crusty bread on a board – interspersed with clusters of olives, nuts and grapes – and leave guests to tuck in as they please. Or you could just order a ready-made sandwich platter or grazing box from Morrisons Food to Order, and serve it alongside your leftover meats and cheeses.
Alternatively, if you’re serving a smaller group, nothing beats a Christmas dinner sandwich, bursting with turkey, stuffing, cranberry sauce and all the trimmings. You could even spice things up and try yours as a burrito or quesadilla.
Samantha’s daughter Isabella loves to help her dad with the cooking during the holidays.
“We’ve got pictures of Isabella seasoning some thigh meat for a turkey curry. They’ve also made leftover turkey breast quesadillas, and even a Caribbean-style turkey and vegetable soup!”
