Honey & lemon-glazed roast chicken with Aunt Bessie's

This is a wholesome, low-effort meal that’s ideal if you’re looking for a flavoursome way to feed the whole family

Ingredients

  • 1 whole chicken
  • 2 tsp kosher salt
  • 250ml lemon juice
  • 1 tbsp extra virgin olive oil
  • 10 sprigs fresh thyme, chopped
  • ½ lemon, cut into wedges
  • 60ml honey
  • Aunt Bessie’s Homestyle Roasties
  • Aunt Bessie’s Honey Glazed Parsnips
  • Aunt Bessie’s Glorious Yorkshires

Method

1.  Rub the chicken with 2 tsp of kosher salt, then transfer to a re-sealable plastic bag and coat it with the lemon juice. Allow to marinate in the fridge for at least 2 hrs (or overnight, if you can), turning the chicken occasionally to ensure it’s completely coated with the lemon juice.

2.  Heat the oven to 200C/180C fan/gas 6. Remove the chicken from fridge and the bag, and pat dry. Rub with the olive oil and season with salt and freshly ground black pepper, then sprinkle over the thyme and squeeze the lemon wedges over. Place the chicken on a rack over a shallow roasting pan, then roast for 45 mins.

3.  Just before you remove the chicken from the oven, gently warm the honey in a small saucepan on a low heat. When the chicken is out, use a pastry brush to glaze the top and sides with the honey.

4.  Roast the chicken for a further 10-15 mins, until fully cooked. Meanwhile, add the Aunt Bessie’s Homestyle Roasties and Aunt Bessie’s Honey Glazed Parsnips to a roasting tray, and cook for 30 mins.

5.  Remove the chicken from the oven and leave to rest for 15 mins, before transferring to a serving dish. When the roasties and parsnips have 5 mins left, add the Aunt Bessie’s Glorious Yorkshires to the oven. Once everything is cooked, remove from the oven and transfer to serving dishes to enjoy immediately.
