Whip up this Buddha bowl in minutes with the Ninja Speedi by your side – perfect for when you fancy a bit of everything

What you'll need

200g green lentils

435ml cold water or hot stock

125g frozen or fresh mushrooms

400g firm tofu or tempeh, cubed or cut into sticks

1 lemon, zested and juiced

1 avocado, sliced, to serve (optional)

handful of fresh herbs e.g. coriander or flat-leaf parsley, roughly chopped, to serve (optional)

pickled vegetables, to serve (optional)

toasted nuts or seeds, to serve (optional)

sliced vegetables e.g cucumber or avocado, to serve (optional)

tomatoes, halved, to serve (optional)

Let's make it

Step 1
Add the lentils to the Cooking Pot, then add the cold water or hot stock and stir until combined. Mix through the mushrooms, then season to taste with salt and pepper.

Step 2
In a bowl, coat the tofu or tempeh with the lemon zest and juice. Transfer to the Cook & Crisp tray in the top position (follow the recommended heights and weights for best results).

Step 3
Close the lid and flip the SmartSwitch up to Rapid Cooker mode. Select Speedi Meals and set the temperature to 180C. Cook for 10-15 mins. Select Start/Stop to begin cooking (the unit will steam for approx. 10 mins before the countdown timer begins). Divide the contents of the Ninja Speedi between four bowls and finish with your desired toppings.
