• 200g quinoa, rinsed
• 375ml cold water or hot stock
• 200g spinach
• 12 meatballs or plant-based meatballs
• 2 tbsp mixed dried herbs e.g. mint, thyme or oregano
• houmous, to serve (optional)
• tzatziki, to serve (optional)
• sliced fresh vegetables e.g. cucumber, red onion or lettuce, to serve (optional)
• handful of fresh herbs e.g. coriander or flat-leaf parsley, roughly chopped, to serve (optional)
• tomatoes, halved, to serve (optional)
Step 1
Add the quinoa to the Cooking Pot, then add the cold water or hot stock and stir until combined. Mix through the spinach, then season to taste with salt and pepper.
Step 2
In a bowl, toss the meatballs through the mixed dried herbs so each one is evenly coated, then transfer to the Cook & Crisp tray in the top position (follow the recommended heights and weights for best results).
Step 3
Close the lid and flip the SmartSwitch up to Rapid Cooker mode. Select Speedi Meals and set the temperature to 180C. Cook for 10-15 mins. Select Start/Stop to begin cooking (the unit will steam for approx. 10 mins before the countdown timer begins). Once cooked, divide the quinoa and meatballs between four plates and finish with your preferred toppings.
