• 200g easy cook white long grain rice
• 500ml cold water or hot stock
• 400g can black beans, drained
• 8 chicken thighs
• 2 tbsp taco or fajita seasoning
• salsa, to serve (optional)
• soured cream, to serve (optional)
• guacamole, to serve (optional)
• handful of fresh herbs e.g coriander or flat-leaf parsley, roughly chopped, to serve (optional)
• cheese e.g. cheddar, to serve (optional)
• sliced vegetables e.g. peppers or lettuce, to serve (optional)
• tortilla or pitta chips, to serve (optional)
Step 1
Add the rice to the Cooking Pot, then add the cold water or hot stock and stir until combined. Season to taste with salt and pepper. Mix the black beans through the rice.
Step 2
Rub the taco or fajita seasoning onto the chicken thighs so they’re evenly coated, then place on the Cook & Crisp tray in the top position (follow the recommended heights and weights for best results).
Step 3
Close the lid and flip the SmartSwitch up to Rapid Cooker mode. Select Speedi Meals and set the temperature to 200C. Cook for 10-15 mins. Select Start/Stop to begin cooking (the unit will steam for approx. 10 mins before the countdown timer begins). Once cooked, divide the chicken and rice between four bowls and finish with your desired toppings.
