• 200g quinoa, rinsed and drained
• 375ml chicken or vegetable stock
• 150g frozen mixed vegetables
• 1 tbsp flat-leaf parsley, roughly chopped
• ½ tsp ground cumin
• ½ tsp ground turmeric
• 1 lemon, thinly sliced
• 4 frozen cod fillets
• 1 tbsp olive oil
Step 1
Add the quinoa, stock, vegetables, parsley and spices to the bottom of the pot and stir together.
Step 2
Pull out the legs on the Cook & Crisp tray, then place it in the top position in the pot, above the quinoa mixture. Arrange the lemon slices on the tray, then place the cod on top of them. Brush with the oil and season.
Step 3
Close the lid and flip the SmartSwitch to Rapid Cooker. Select Speedi Meals, then set the temperature to 200C and the timer to 10 mins. Select Start/Stop to begin cooking (the unit will steam for approx. 8 mins before the countdown timer starts).
Step 4
Once cooked, transfer the cod and lemon slices to a plate. Using silicone-tipped tongs, grab the centre handle and remove the tray from the unit. Fluff the quinoa and serve with the fish and lemon.
